Happy Australia Day! or, Isn’t This Supposed To Be A Knitting Blog?

Why, yes. Yes, it is, and there has been knitting going on at Chez Frog, which will be documented in the very near future, but there are only two days in the year when my hubby gets all patriotic and ask me to bake a damperAustralia Day and Anzac Day. So I’m blogging my efforts for you today, and including a recipe for those who don’t already know how to make one.


Australia Day Damper

3.5cups (525g) self-raising flour

1 teaspoon bicarb soda

1 teaspoon salt

1 Tablespoon caster sugar

60g butter

1 cup buttermilk (or skim milk if no buttermilk is available)

1/2 cup water (aproximately)

  1. Preheat oven to 210*C (410*F). Grease an oven tray or cake tin.
  2. Sift dry ingredients into a large bowl, rub in butter. Stir in buttermilk and enough water to mix to a sticky dough.
  3. Turn dough onto a floured serface, knead until just smooth. Place ball of dough on greased oven tray, flatten out slightly. Using a sharp knife, score the top into 6-8 wedges. Brush dough with a little extra milk, then sprinkle with a little extra flour.
  4. Bake in preheated oven for 45 minutes or until damper is crisp, golden, and sounds hollow when you tap it with your knuckle. Turn out onto a rack and allow to cool for 10-15 minutes. Serve warm with butter and golden syrup or treacle.

    We had damper made by 21 y.o. DD for breakfast; oops, sorry, I’m told it was brunch! DH had to go out for Golden Syrup [“cockies’ joy”] for that traditional topping!

    LOL,I loove cockies joy with hot pumpkin scones!!!
    We re doing things back to front today! Bacon and eggs on the BBq for tea by request from the kids…..

    Happy Australia day! I will make a damper the minute I figure out what caster sugar is and locate a source for treacle. Geez, you’d think we lived in totally different countries or something! : )

    Yet another Yum! Love damper (although I tend to think the golden syrup one is for camping and at home ones with herbs and chees – but either way it’s a great aussie thing!

    Happy Australia Day- at the Citizenship Ceremony yesterday there were sandwiches (egg and lettuce:gold and green) ANZACs, yellow and green Lamingtons and sausage rolls. No damper and it looks delicious!!! THough shouldn’t it be pumpkin in honour of Lady Flo??!!(Not!!)
